Is there any way a 325i can do 0-60 in 6ish secs, what would need to be done to engine if so.

I think you would need around 250bhp or so to manage that, changing the diff to suit 0-60 sprints would also be worth looking at, but would affect how the car drives the rest of the time.
Strip weight 1st, carpets, rear seats, spare wheel, passenger seat, throw out the I.C.E.

a good zorst, chip and BBTB would help the cause also. But this is fast 2.7 territory really, Just under 7 secs is a good time for 2.5's

5psi turbo will set you at 6.1sec or so,
My S50B30 swap sets me at about 5.3-.5.6

from a standard tuned 3.5 conversion an a 2dr.
so you need something like 220bhp/230 lbft to get to six secs

I'm getting consistent 6.9? in my 2.5. Even had a 6.92 with a mate on board so I'd hope to get in the 6.7 - 6.8's with a v-good launch
A mild cam and a 3.64 lsd may help to avoid the rush to 3rd when 60 comes up but it's not bad for std internals and a few tweaks
Short shift used right is a sure way to speed things up, find mine one of the best mods I've done for this type of thing. And the ZONE chip and BBTB obviously come into their own
