Recently put a new clutch kit into my 352i sport and also changed the slave cylinder but now my clutch is very long, bleed the system with a syringe also, any ideas on what could be wrong with it?

Bleed it again. When filled from empty, the E30 clutch hydraulic system loves to form tiny bubbles of air in the fluid which won't bleed through. After being left for a while, the micro bubbles collect together to form larger ones, which are easily removed by normal bleeding.
Alternatively, the clutch master cylinder's piston may have been pushed slightly further into the bore than it has been for a few years while this was going on, and has now damaged the already deteriorated seal, if the cylinder is the original (and possibly the fluid as well).
