Extremely simple, but the first time I needed to, it took me a while to figure out.
Side bolsters pull out at the bottom, then lift up - easy to miss the top fixing when you refit.
The back rests pull off of the frame at the bottom, then lift, BUT exactly where you naturally place your fingers to pull, there are extremely sharp edged clips, which will draw blood.
Alternatively, the whole backrest assembly can be removed in one. There are spring clips below the bolsters which need to be wedged out with small screwdrivers, then the whole lot moves slightly sideways and off. Once you've done it, you'll wonder why you couldn't see it in the first place.

Extremely simple sums me up!! my side bolsters were fixed at the bottom with a bolt, so they are now out, going to have another look at the back rests

Sorry, yes, there is a screw at the bottom of each bolster on an E30. I've been playing with too much E34/36/39 scrap lately, and am getting confused. That and the half bottle of red I've been knocking back each night on holiday!

Look for the rectangular spring clips that hold the hinge bar for the complete seat back.
Can't remember if there are two or three, but they all need to be sprung at the same time, then move then whole lot sideways half an inch.
When you find them, you'll wonder why you couldn't see them.
