How is the glass of the headlight held in place/how do I remove it?
This picture shows them dismantled but on realoem they appear to be sealed?

The glass is bonded on. You need to apply heat to loosen the bond and then carefully prise it off.

The lens are glued on. Use a heat gun and gently heat up the glue. Keep going round the light to avoid melting the plastic.
Should pull apart after that.
