I've been having intermittent problems recently with the 325 idle.
It sounds like it has a misfire and is hunting from around 500-1000 rpm on idle. At times it will also cut out completely under the slightest throttle input.
I have replaced the ICV, TPS, Coolant Temp sensor, spark plugs and Distributor.
I'm quickly running out of ideas so any help would be appreciated!

Which ECU do you have? The later 0 261 200 380 was reknowned for blowing diodes in the idle control circuit, which could cause such an issue.
Try disconnecting the battery, leave for an hour or so to reset the ECU, reconnect, let it idle for at least 10 minutes, switch off, then go for a drive throughout the rev range.
