I put the central lock control back in the foot well and put the plastic trim back up under the dash. I went for a drive and I noticed the mileage was not changing. Could it be coincidence or did I unplug something while messing with the wires? Is there a fuse for this? Any thoughts on what the problem could be? The fuel gauge is also bouncing intermittently. Thanks.

No connection between any of this whatsoever, other than yo probably gave the cluster a jolt while working below it.
Fuel gauge: Tighten the brass nut behind it, on the outside of the case.
Odometer: If you're lucky it will be a cracked solder joint on the speedo PCB, where the pins that plug into the main cluster circuit board are soldered on to it, or the gearwheels between the mileage displays and the motor that drives them will have broken up.
