How easy is it to retro fit rear head rests into a touring bench I have leather but no head rests and a fabric set with head rests so I just need to get a set of black head rests and nick the fitting kit from the other seats

Two amendments needed to that wiki article:
1/ The fitting kit for touring (not saloon) rear seats is identical to the bits found in every E30 front seat. Just rob the kit from the same seats as the head rests come from.
2/ Be very careful when pulling the seat backs off of the touring seat frame. There are very sharp clips located just in the place that you naturally push your fingers in to pull the back off, and these clips will rip chunks out of your finger tips.
