My 325i is going to be multipurpose, track days, maybe some sprints and definitely a bit of drifting. With regards to drifting, there won't be much airflow through the radiator. My car has an electric fan fitted already but I don't want any overheating issues, so what else should I be doing? Another bigger radiator? Bigger fan? Advise please!

Both! Get a double core rad and a more powerful fan, also you should raise the corners of the boot lid and remove the rubber gasket, this allows a lot more air to escape out of the engine bay.

And an override switch for the fan is also a good idea... 
Just a stab in the dark, but for the M20 a 'tropical' radiator was available otherwise I am thinking E34 or E36??? Have a look in the engine transplant forums - you should get some ideas there...
