Got a real problem with my 1990 318i stalling. If I let the revs drop too fast when coming to a stop, completely de-clutch when moving or blip the accelerator when in neutral, the revs often drop right down to 500, the engine shudders and then stalls. Happens when it's cold or hot. Otherwise, it idles fine and runs fine.

Lot of this about at the moment. First thing I'd do, based on personal experience, is check the state of the spark plugs. A thick carbon deposit will impact on their correct functioning and may lead to the sort of symptoms you've described. If they're okay go on and check the TPS, as already mentioned. Also check all the intake hoses especially the large one ( It probably has a name but blowed if I know it) going to the throttle housing, for leaks.
