Main body wiring loom could well be OK to stay. Most of the extras that the 325 may have over the 316 are seperate additional looms.
It is fairly easy to change the looms behind the dash with out removing it, if you remove the radio and the instrument cluster as well as the access covers at each end. Having said that, it is much easier to remove and repolace the whole dash than you might think.
One of my projects at the moment is something similar - transfering all the fancy electrical bits, the ABS, electric windows front and back, the electric sunroof, the suspension etc. from a 1990 325SE + E36 gearbox and M50 engine, into a poverty spec. 1989 320 Touring.
