Which temp sensor for the head?

Can you only use the brown temperature sensor or can you use the blue one and also where is best place to get one?

For the temp guage? Brown one only. The blue one doesn't work the guage.
Not sure if they're available from ECP/GSF etc, so it might have to be from the dealer or one of the traders on here might have one secondhand.
