Ideally you will have the correct throttle/MAF for your engine/management,
Samco is probably the best available, I have them on my cars but bought from the US

Viper performance do a massive range and I have found their stuff to be pretty good without the price of the samco stuff.

I have one of their big 90 deg reducers and the taper on it is quite nice and smooth.
80 - 75 is a tricky size though.
You will fine it is all 80-60 or 83/89-75.
For an 80-75 I would be tempted to stick 2.5mm rubber around the diameter of the 75mm part and use a non reducer hose.
What engine do you have? I can confirm the size of the 328 M52 and 325 M50 MAF is the same, will check what that is later tonight.

Take a measure of the outside of the throttle, the bmw based big bore throttles are made using the stock outer housing.
