What years are the same on an E30 - e.g. would the exhaust off an '89 car fit a '85 car (with the same engine/manifold)?
Are they all the same?

There are 2 manifolds for the M20, early cars differ from late, but you can put a late manifold on an early car
By early I mean pre 87
Early cars use 3 studs later cars use 4 studs on the down pipe

True (don't know about the date!), but not quite the whole story: There are 2 types of 4-stud manifold too, one with a slightly smaller flange than the other...
If you take the whole system including manifold, then any 325i system will fit any other 325i. Otherwise, it depends on the manifold (as already covered) and on whether you've already got part of a 2/3 piece system - you can't just fit a back box from a 3-piece system to the front half of a 2-piece system for example.
Clear as mud?!
All of the above only really applies to the 325i btw - I wouldn't know about t'others but no doubt someone will
