-Momo Boss Kit P/n 2006 is the correct E30 boss kit. It is semi-collapsible in the event of an impact, and is the preferred style of boss kit for BMW Motorsport (used in the MINI Challenge Cars and the E92 M3 GT4).
-Recommend a 350 or 330mm diameter 3-spoke wheel with a suede covering. Like a Sparco Ring or 353, or a Sportline 350.
-You might also want to look at a quick release adaptor, but that might disable your horn button. Recommend an FIA approved unit, I prefer the Krontec QR-01 over the splined Sparco/Lifeline/Momo units.

I've ordered a OMP 350mm in Suede, 3 spokes, it has a 70mm dish and boss, quick release is a problem as you say with the horn which I want for on the road,
