on programmes like american hotrod u see the bodyshop totally covering the car in filler or bondo??any idea why and what it is

It's just standard body filler. They do it because the cars are very old, and they want 'PERFECT' show finishes, and therefore need to work out every imperfection. It's easier for them to do that than work the metal back to perfection (which may not be possible).
It's okay as they end up sanding most of it off, and if they ever show clips of it before primer you'll see that most of the filler has been sanded down, and only minute amounts remain in what were the low spots.
