I'm looking to purchase a Wet Vacuum to give my interior a thorough cleaning. I'll only be using it on the carpets as I have leather seats.
I'll probably remove the front seats whilst using it, but leaving the carpets in.
Any recommendations? What soaps should I be using?

I can't comment on the Vax in your link but I bought a George (the wet version of Henry)

It's proved to be very good so far.
Combined with a can of this, for any tough stains:

The George came with a bottle of cleaning fluid to add to the water, which after sucking all the dirt out of my 28 year old Golf, valeting the 2008 focus ready for sale and doing a couple of rooms in the house and now as I've nearly finished the beamer is nearly all gone.
Make sure whatever you get it comes with the hand held bits, I think sometimes you see them on offer - but the reason they do them cheap is they're basic versions without all the accessories.

I use a George for valeting as well, but in the case of E30 carpets, I would recommend taking them right out - it's not a difficult job, and there's things to do/inspect underneath while they're out. When it's out, attack it with a pressure washer and detergent, and thoroughly clean it - you won't damage it, they're indestructible. Hang it up to thoroughly dry.
George is the one to get, but I have heard good things about the vax which is cheaper...Vax does carpet and upholstery cleaning solutions too.
Cleaning the carpet with a pressure washer does work a treat but if you cannot do this then try and get some Bilt Hamber Surfex HD, which is a water based degreaser that works extremely well as an all purprose cleaner when diluted accordingly.
