It will make little difference to the sound either way. One amp is easier to wire up, as you only need a single power feed.
I would tend to advise not to bother with rear speakers (apart from a sub somewhere). You will get a much better sound from a good quality set of front components and nothing on the rear shelf.
I may possibly have a nice shiny amp sitting doing nothing if you are in the market
Ian.
If it aint broke - Modify it...

i sort of agree with ian
but if you really want rears power them from own amp
a little more work but will sound better plus if an amp goes down you still have one running

gotta say it Jhonno, you're doin pretty well without the r key.... wonder what key will go next...
I'd probably go 2 separate amps as well..also less wiring if you can wire the front amp under one of the front seats instead of running rca's all the way to the boot only to run speaker cables back to the front speakers..

For your situation i'd say a 4 channel amp is fine and cheaper. Generally if you buy a 4 channel amp for say £200 it will sound better that two 2 channel amps for the same money, because buying the equivalant 2 channel amps usually cost more. Have you tried running the rear speakers of the headunit? it's only rearfill.
Or if you really want two amps you can use one 2 channel amp per side up front and head unit for rearfill like me.
