Right
i want to cover:
-floor pan including over tunnel, bulk head and under rear bench.
-doors inner and outer skin
-entire boot area boot including back of rear seats
-hard to reach arches will be done with spectrum sludge but any areaa that can take a strip of of sound deadening will get one.
only doing one layer to keep the weight down.
i am useless at estimating this kind of thing, the stuff comes in 60sq ft rolls from the states and i am hoping 2 will do, what do you think?

it is about 12 rolls of dynamat - i'm pretty sure that's what kam is referring to. not sure how large a sheet of dynomat is. does their website oblige?
2 bulk boxes of dynomat does the job and is cheaper than 12 individual rolls.

Anyone know, for the purposes of quietening the interior and not sound quality, where would the most relevant areas to use soundproofing in a Touring?

The boot?!? That's like a whole other room away tho.
I heard the doors are pretty significant.
If you only had 4 rolls, where would you put them - we're talking Touring here.

ok in this order till you run out
transmission tunnel, drivers footwell, front bulkhead (below and behind dash), passenger footwell, rear footwells (if you didn't allready do them before for fronts!), doors (fronts first) and in the off chance you have more than a postage stamp left the boot.
That is unless u have some mahussive exhaust system, then put boot right to the top of the list, although I suspect that isn't a problem here!

That's interesting that the boot contributes so much noise even though it has many things between it and your ears - seats, carpet trim etc...
