Where there's a will there's a way. You could easily turn some new caps out on a lathe or modify some existing ones.
I had an engineering place knock me up a set years back to modify some MIM 1900s.
However I've got to say they look better with the open centre. Be brave and put some proper old-school wheels on.
Something to be aware of is that lots of the early e21 wheels were a low offset - often about ET13. You may need arch work on the rear if you go low.
