Can anyone tell me what the standard ET (offset) is for E30 M3 alloys and also the size of the centre bore?
I want to fit some deep dish alloys so would like to know what sort of offset i will need on the alloys so they don't stick out too much or stick in too much.
Tried a search but nothing came up, literally.

The Standard 15" are 7" wide with ET30 and the Sport Evo 16" are 7.5" wide with ET27.
Knowing this you can compare the relative dimensions of any wheels you are looking at buying by using an online wheel offset calculator like this one http://www.1010tires.com/WheelOffsetCalculator.asp
One other point of caution is that the wheel is not the not the only factor as the the tyre that you fit can be the difference between a wheel fitting without rubbing or not.
I am pretty sure the ones in the link you posted wont fit, but someone might correct me. But I think they would look really strange if the did IMO, the outer surface of the front wheel would move in 5mm from STD and the rears would move out by 79mm.

Cheers for the info, it's a good starting point 
I'll be looking at probably 8J or 8.5J up front and 9J or 9.5J on the rear. I'll be running stretched tyres so that should help.
Something like 8J ET20 and 9J ET15, would that work?

You could also search on S14.net as the yanks love their wide rims
. I'm sure someone on there will have found out the widest you can fit.
Is the car modded in any other way? i.e. lowerd or non STD brakes as that can affect things too.

I had a brief look on S14.net last night but found it a bit confusing/complicated
I don't want massive wide rims, 9J rears would be enough
I'm not sure what springs are fitted, weather they are standard or lowered as there is nothing in the car so it's currently 4x4 spec
Brakes are standard AFAIK.
Seen a few set's of Style 5's but they seem very popular, ideally would like something different

I can sympathise with being confused as it still confuse's me. I am no expert. I have had rubbing issues on my cars, I have 235 45 17 on the front of my road M3 and they rub on 3/4 lock at the front and the back of the arch (until the tread wears down
)
As far a I have been able to gather the limit on the front is 235 40 17 if you dont want rubbing.
Style 5's are popular for a reason, they look great IMO. However I have Borbet C 17's on one of mine which I really like and are a bit different. I have Schnitzer 16's on the track car. The wheels you can fit are also dependant on the depth of your pockets sadly.

I'll probably be running 215/40 as they look better on deep dish wheels so hopefully it shouldn't rub on full lock or on the arches.

style 5s are 8x17 et20 and 9x17et22 and look nice with plenty of room, i ran both 215 40 and 215 45 on the fronts with no issues, and 235 40 on the rears.
no need for stretch unless youre running silly wide, like pokey 10s and 11s
m3 centrebore is the same as e34, e36 etc although i can't remember what it is off the top of my head. some of the more modern bmws i.e e39 have a very slightly larger centrebore, but you can get spigots to take them down.

Style 5's are the one of the best looking rims on an e30 whether it be a m3 or not. 
I've got the e34 m5 rims on my m3 rep 8.5j all around. Same design as the e36 M kontours.
I do have a spare set of the same wheels in 8.5/10j which don't fit as i'm running e36 5 stud set up.
