Just wondering what the pro's and con's are on the 5 stud conversion.

I'm guessing it opens my wheel options up a little up?
Is a different offset on wheels needed at all?

If you use the E30 M3 stuff (if you can find any), it costs a lot, but you will get a setup designed for the E30. You will need wheels with or around the M3 offset.
If you go the E36/compact route, you need wheels of the E36 offset and, by the time you have bought all the bits needed to realign the front wheels etc it will cost almost as much as an E30 M3 setup, but still not have totally the correct geometry. I doubt this would matter for an everyday cruising car, but I reckon it might make a difference once driven hard, especially on a track.
From a cost point of view, its not really worth doing just to fit a set of wheels.

You'l have bigger/better brakes, wider choice of wheels at a cheaper rate, wider stance 12mm each corner, and not forgetting a extra stud holding the wheel, LOL.
I've got everything you need, let me know if you are interested, avoid all the running around, collecting bits.

What is the parts list for a 5 stud set up?
I know its Compact ti rear beam (complete)
But about the front, do they 'have' to be E36 M3 items?
