Just about everything on there that you would need..
MACMinis are becoming popular although I wouldn't use one :p
I would go for an ITX based unit in the boot with a solidstate IDE disk (idea of harddrives in lowered cars don't appeal) then use a touchscreen LCD mounted in the dash somewhere with a media reader (SD, CFlash and a couple of USB ports) mounted where the headunit goes. Wireless is a great idea as you can transfer songs from the PC without actually having to carry anything, you could also use WoL to boot the PC up from the house!
Toying with this idea too as my 7 year old MD headunit is beginning to fail and CD based stuff is just a stupid idea, too fragile, too big, too stupid..

strip it all out from the tower and do a glovebox install lets face it most of pc tower is empty anyway so lot easier if you take it apart and fit the components into a small and tidy enclosure
glovebox would be my choice plus if you change car its not hard to swap glove boxes over Daz

Have a look here:
http://www.icp-epia.co.uk/
6" square motherboard with onboard everything, can also get DC 12V PSU for it for Ԛ£20...

And you can get smaller than that again..
