I am about to update sound and would appreciate any good sources of "ICE for dummies". Thanks

There's some stuff in the zone wiki
http://www.e30zone.net/e30zonewiki/index.php/E30_ICE
Search around on here too - there's some good ideas.
Basically the general thoughts are that a good component set up for the front (a pair of 5" speakers, a signal frequency dividing box and a pair of tweeters) with a small amplifier and a small subwoofer (with amp) for the boot is what is recommended. The inclusion of rear speakers is a matter of personal taste, or for the benefit of rear passengers. Some say rear speakers create a bad 'sound image'.
Check out http://www.talkaudio.co.uk/ for lots of info - not exactly beginners stuff
Really it's best to listen to other people's set ups first to get an idea of what you like.
