Heyoo,
right, in short, if I have my stereo really loud, my head unit can cut out. You can visibly see the lack of power getting sent to the headunit with various sounds (e.g a bass drum), you can actually see it dim.
Im tempted to put my sub back in, but that will obviously take more power. Will getting a new battery remedy this?

Your head unit is suffering from clipping, simply this is where there is more power going from the headunit (to the speakers) then going into it.
Two ways to remedy you could get a more powerful headunit or more often than not, get speakers which have a higher sensitivity rating ( this is the rating in dB) above 90 is prefered.
Last resort is to amplify all the speakers using the pre outs on the headunit some top end units have 3 pairs, most of have 2 pair, cheap ones have none or one pair.

i had the same problem with mine for ages. the stereo output was 60wattx4, so plenty of power there and i was running good quality speakers with a sub running off the sub-out. I tried disconnecting the sub but that made no difference, i got told one of the speakers may be buggered so i disconnected one at a time leaving just three connect each tme to see if i could fnd a faulty one but that again made no difference. I dont know if its the same on yours but i could turn mne up that little bit louder the lower i had the bass set.
I took the stereo out to take to get it bench tested but got told to basically bypass the head units amp by running all four speakers off a seperate amplifer running off the pre-outs. I tried this and it worked perfectly and has been doing since
