M50 AND 3.0 S50 QUESTION?

if i was to get an s50 engine would i be able bolt a 2.5 m50 head on giving me a 3.0 engine?

if you were to get an S50 engine, why wouldn't you leave the S50 head on there?

I'm guessing, may be easier header setup or smaller plenum?
