Hello and welcome to the Zone.........

there are many different ECU's for those engines, some will run, some wont........

Firstly, welcome.
Answer to your question is no, you can't mix-and-match ECU's.

Having said that, the difference is the chip. If you had, say, a 316i ECU fitted with a 325i chip, that would be fine.

This is why I no longer drive an E30......

You can mix ecus, ive had various different ones on my various 325s and 320,s
But if you get the wrong chip it wont start and then theres ones that will be for Kat cars and ecus for non kat cars but if your car has a kat it does not need to runn a kat ecu it will work fine with a non kat ecu.
But a 325 ecu will work fine in a 320.

For example my 325 had a ecu with the serial with the number of 152(If my memory serves me correctly)
And now its got a 171 ecu with a denon chip.
