My coolant check light keeps coming on after driving the car for 20 minutes from cold, the temperature gauge is just below halfway, no obvious loss of coolant. Could it possibly be a sensor or does something need resetting?

Likely to be the coolant sensor if the coolant isn't actually falling.

Does the car use water?

It doesn't have to drop much for the light to come on..

No it isn't using any water
How much are the sensors normally and is it easy to change?

There's a reed switch inside the plastic stem of the coolant sensor. Water gets inside the stem and rots the thin wires.
If you replace it, there are two types. One which mounts with the terminals upwards, for header tanks mounted on the inner wing, and one where the terminals are at the bottom, for radiators with integrated header tanks.
Fit the wrong one and it will indicate low coolant when full, and coolant OK when it is low.
