Very easy to remove and replace an E30 dash.
Unplug the wiring connector behind the glovebox, remove the centre console, remove the screws that hold the heater control panel, so that it stays behind, remove two bolts at either side, and ease it out.
May be the odd cable tie to cut, but that's pretty much it.

Every wire should have a plug on the end. DONT GO CHOPPING WIRES if they can be unpluged.

Get a rocker cover on that!! You don't want bird shit going on it.
I'd chop the wires but take a load of photos first as your's may be slightly different to Daz's and when doing it from memory it only takes a little thing to trip you up, and a photo will just get you back on track.

Most of the wiring on an E30 body is all one big loom. If the engine bay is completely burnt, the only surviving wiring will be the plug in loom across the dash, the fuel pump/diff loom and a few smal accesories looms.
