Do springs "Unsquash" after thay have been removed from the car.

I have compared some old springs i removed from my car about 5 months ago to the new H&R ones i have got. The old ones made the back end sit to low, something like a -60mm drop. but the new H&R ones are even smaller than those and they are a -40 drop.

No, they should go back to normal size imo. however dont let the size of the spring put you off. Each spring will have a different load bearing and compress differently

Sounds like H&R -40mm are stiffer, so they compress less under the same load.
