If your machinist doesn't know, trust me, he doesn't have the experience to do it !

The simplest answer is the absolute minimum, such that a flat, shiny surface is created.

I gave mine to the excellent Hurley's in Bath and they pressure tested it, and took 0.007" (0.2 mm) off. It was already flat, but a bit stained and slightly corroded, so this was just enough to make it ready for the new gasket. It's been trouble free for 2 years and 5K miles now.

Of course if your head is slightly warped, then more will be necessary. Do it too much though, and the pistons will hit the valves, as the clearance is very small. I believe it's possible to get extra-thick gaskets for this eventuality. I don't know how much head can be removed before this happens.

Do a search on the site ! This has been discussed in the past.

There are little circles on the head sealing surface that show the minimum thickness (they disappear as the head gets milled too thin)
