Hi Zoners

On my 325 race car I've had the task of removing the perished overflow pipe which I have done.

However along with this I had to remove 2x Black plastic tubes going up to a tank in the top of the drivers side rear arch. Is this the carbon canister or expansion tank?

Anyways is it safe to blank the two pipes marked by the arrows? what are they for?

As its becoming a right pig to get back in, and if its not needed I will just remove the whole lot.

It's an expansion tank, carbon canister was on mostly USA cars and is found in engine bay, as much as I know there

One is the fuel system vent pipe to the front of the car (which would connect to the carbon canister, if you had one) and the other is a vent pipe from the RH side of the fuel tank, so that it will fully fill if the car is fuelled with the RH wheels higher than the left.
The latter shouldn't be a concern for a race car, so that can be blocked, and the former doesn't need to go to the front of the car, BUT provision must be made for air to enter to replace used fuel somehow, without creating a system that would leak fuel in a roll.
The large rubber hose that is missing is the main tank vent pipe, which allows fuel to flow down the filler pipe without spitting back.
