Starter: Find two black/yellow wires behind glove box, each plugged into a black wire (IIRC).
Unplug both black wires from the black/yellows, and plug the two black/yellows together - one has a male plug, and the other a female.
Trace black wires to a relay, remove relay and all wiring connected to it.

Reverse lights: After removing the auto gear selector lever, along with the switch mounted on it, you should be left with a two pin plug, near the base of the gear lever, which has green/white and blue/white wires.
If you have used the correct E30 rubber grommet around the gear lever where it passes through the floor pan, it should have two black wires emerging through it, with a matching connector to plug into the green/white and blue/white. The black wires are clipped to the fixed member of the gear linkage under the car, and go over to the reverse light switch, high on the RH side of the gearbox.

Plugging the two black/yellows together will change the starter motor wiring to exactly how it would be on a manual car from the factory.

They just plug together, once the other wires (the ones that go to the starter inhibitor relay) that are plugged into them at the moment are removed.

If the engine now cranks ("turns over"), then you must have pushed the right wires together.
Nothing in an auto to manual conversion should affect the fuelling (unless it was an early type gearbox you removed with the crank position sensors mounted on the bell housing).

Rest of inhibitor wiring won't do any harm if left.

Wires coming through the grommet go to a plug that should have been disconnected from the wires to the switch on the auto. selector lever when you removed it, and the other end of the wires under the car, with spade connectors on, go to the reverse light switch, high up on the RH side of the manual gearbox.

Hub and bearing are one unit, and held on by the centre nut only.
