Does anyone know the size of socket required to remove the rear hub nut on an 1989 325i tourer (solid disc's) also what to re-torque it to?

Use a suitable 'breaker bar' or a length of scaffold or similar pole over a large socket set wrench to undo and tighten them - with the wheels on the ground and handbrake on/car in a low gear to prevent it moving.
Generally, they should be pretty tight; E30 Zone Wiki suggests 200Nm (147.5 lbft) or thereabouts:

Sorry, rear hub nut should be 249Nm (M3 is 300Nm) according to that guide, under 'Rear Suspension'.
200Nm is for the 'driveshaft nut' under clutch and drivetrain heading.
