What should the resistance be for he blue temp sensor.

At around 70 degrees mine is reading 500 ohm an is gradually increasing as the engine cools is this correct?

The two wiki figures are for full running temperature and stone cold. These are normally enough to ascertain whether a sensor is good or faulty, but assumes that the intermediate resistance/temperature points in between are correct, which occasionally are not.
If you want to do a full test, the graphs are easily found on line.
Bought a nice black, two door 318i many years ago, for a very good price, that had a slight misfire until fully warmed up. It had been looked at by a few mechanics without success, and the owner had given up. My hunch was correct, and a (used) fresh blue temp. sensor sorted the problem completely.
