H&R cup kit for touring

Cab or saloon kit?

Is it better to have the rear a little soft or a little hard?

Or is it not a B+W as that? Would the saloon springs make the rear sit too short and the cab too high?

It will be the 60/40 kit.

Saloon springs make it sit too low and bottom out everywhere.

Cab and touring share the same springs.

60 is frankly too low for the suspension geometry to cope with, it won't drive well afterwards.
