I need to replace one of my light adjusters but can't figure out how to remove the cup that the threaded shaft sits in. can anyone shed some light on this?

It's a hell of a lot easier to do this with the headlights off the car. That way, you can clearly see that the nylon "nut" neefs to be rotated 90 degrees in order to fit through the headlight mount.

I don't think i've ever got the metal bolt out of the plastic cup without breaking the cup, so make sure you have at least one spare cup to go with your new bolt.

I've twisted the "nut" 90 degrees and removed the light from the frame but I now need to remove the bolt and cup. should the bolt just pull out of the cup or can the bolt and cup be removed together?

I think with a lot of fiddling with screwdrivers you can prise the legs of cup inwards just enough for it to pull out with the bolt. But really, don't count on it; if it's the original one then the plastic will be properly brittle by now.

Plenty of wd40 on the plastic cup and the ball on the end of the adjuster. Leave it to soak.
then use a pair of pliers and slowly prise it out. I've done this with a great deal of success without breaking the cup. :D
