Just when you go to rev it from idle, sometimes it bogs right down trying to stall, soon as you remove foot from pedal it revs up a little.

Any ideas where to start looking? Thinking its over fuelling but mpg is about 18-20 driving fairly heavy which seems about right?

Sounds more like under fuelling to me. Check that the throttle position switch is working reliably when the throttle is moved off of its stop and released again, and that the switch operates immediately the throttle leaves its stop.
Also, consider getting the injectors rebuilt. (See "injectortune" in our traders' forum).
