My original SI board spilled battery acid all over itself so I swapped it for a new one, but as it turns out my car 03/1987 has the single fuel sensor and the gauge is from a car with two sensors (correct me if I'm wrong). Can I swap my old gauge into the new cluster or will this not work?

I presume you've swapped the whole cluster, not just the SI board. I strongly recommend that you replace the batteries on any second hand board though, unless it was bought with new ones, since they are likely to be on their last legs.
Yes, you can swap just the gauge over, but it would make more sense to swap the SI board into your original cluster. Just split the clusters and fit the new front half to the old rear half.
