Are the dials on these interchangeable to one another??

As in using the VDO speedo and putting it in to the Motometer one??

When I was forced to try I could not get the different types of dials to exchange electrically forcing me to make this contraption

Eventually I managed to remove the white dials when I got a motronic rev-counter

Old and new speedo also have a different circuit SI board, hence the casings can not be interchanged either

I stand corrected (well sitting at the moment but meh.)

I know the SI boards are different, the connector between the two boards is different.

Did not think the actual gauge parts were different though but do remember your issues.
Did you find out exactly what was stopping you from swapping the gauges?
