How can I remove the headlight on my cab? I've disconnected everything apart from this one connector, looks like some kind of fluid pipe? How can I remove this?

This pipe is for the hydraulic headlamp aim adjusters, and the chances are they don't work, so the pipe can be cut. If you have one of the 0.5% of E30's where they still work, either push the plastic pins out of the pop rivets that hold the cylinder support frame to the headlamp frame, or twist the cylinder in the frame - it fits in like a three prong bayonet cap light bulb. The centre rod will still be attached to the rim of the headlamp, and the ball end of this will need to be pulled out, probably breaking the plastic bucket in which it fits.
Looks like your front loom could do with re wrapping. Condition of electrical wiring is part of the MOT test now!

Cheers for that, I will check to see if the adjusters still work. I will try to ridy it up back there while everything is off the car. Are the headlamp rings easy to remove as well?
