M20 engines are notoriously hard to bleed. It helps to jack the front of the car up as high as possible while changing the coolant:

For a difficult one: Remove the coolant pressure cap, overfill the bottle a little, and pull the overflow rubber tube in through its hole in the inner wing. Disconnect the heater hose at the upper stub pipe on the bulkhead, put one hand flat over the top of the coolant bottle neck, put the free end of the overflow tube in your mouth, and blow gently.
As coolant begins to flow from both the heater hose and the stub on the bulkhead, push the hose back on and tighten the clip.

M20's are about the easiest thing to bleed. There's nothing to them. The secret to filling any cooling system is to let air escape as coolant is going in, and to fill slowly. I leave the top rad hose disconnected and the bleed screw out. Fill the expansion bottle and wait for it to drain down before filling again, and so on until you've added around 8-10 litres of coolant. When coolant starts to build up in the top hose, refit it, tighten the bleed screw and fire up the engine. Hold it at 3000 rpm with the heater on hot, and it should start to pump warm air within a minute or two. At that point, undo the bleed screw to less a hiss of air and a stream of coolant out, top up the level and it's job done. To fill and bleed is 10 minutes tops.
