It looks like my auto box is leaking. So I might take this opportunity to fit convert to manual!

I would like to know what parts are needed and any other help or advice would be apperciated.

Parts I know I need:
5 speed transmission (Hopefully sports box)
Driveshaft for a 5 speed (is this really needed?)
brake and clutch pedal box
shift knob
all shifting mechanism
clutch fluid resivoir
clutch kit
shift boot
new transmission mounts

Anything else?

No, the auto wiring is OK, apart from you need the small loom from the centre console down to the gearbox for the reverse light switch.
Removing the starter inhibit is just a matter of removing a small loom and a relay, and pushing two connectors together.
Some have said that the ECU gives too high an idle speed, IIRC, but I've never had any problem using the auto one.
You need the manual prop. to fill up the nasty gap you will otherwise have in the driveline.
Missing from your list is the flywheel and spigot bearing.

Ok then so:
5 speed transmission (Hopefully sports box)
Driveshaft for a 5 speed (needed)
brake and clutch pedal box
shift knob
all shifting mechanism
clutch fluid resivoir
clutch kit
shift boot
new transmission mounts
flywheel and spigot bearing

And does the clutch fluid reservoir bracket need welding on?

And the little reverse light loom as I mentioned above.
Yes, the bracket for the clutch resevoir is welded on in factory manuals, and I always have in the ones I've done, but it shouldn't be rocket science to fabricate a bolt on one.

diff is different too, ratios are not same, auto diff i think will give better acceleration but less top end,

you also need the interior trim surround i think?? and if i was you go for the Z3 (or similar) short shift, see tech articles on how to.

and please correct me if i am wrong but does the clutch not share the same fluid with the brake resevoir?? which means no clutch reservoir just you will need master and slave cylinders??

need to know cause about to start my conversion!!??

Does on yours, but not on ours.
We have the brake master one side of the car and the clutch master on the other.
