I've just had the MR2 on stands... I jacked up the back in one go, using a rail that runs under t'engine.
However, on the e30, it was one side at a time, I used to jack off (fnarr fnarr) the chassis rail either just behind the front wheel, or just in front of the rear.
One side at a time.

318iS became MR2 Turbo became FTO GPX Mivec became Impreza became Rover 620Ti became Honda S2000 (current) became Fiesta 1.25 and 200SX Drift Slag (when the Honda has gone)

Hi,
I put mine of axle stands yesterday and have done it a couple of times over the past month or so. Not sure if I've doing right but you may have the same problem I'm having with that bodykit. I've added the pic below to show where I jack mine up, I jack it up as close to the middle as I can making sure I can fit 2 axle stands either side first. Because of the bodykit it takes forever jacking up an inch at a time before I can get a good "swing" at it!!
Just like to add this is my first E30 and am no way an expert if I doing wrong somebody please say!!!
ps. The pic is of my car, but the pic of the underneath isn't.

I've had to jack mine up one side at a time and place the axle stands under what seems to be the sub frame ( ridges towards the centre of the car- can't miss 'em). BUT... the axle stands have had to be set at their lowest or second lowest pegs (mine are from halfords) before lowering the car onto them.
To go higher, after I'd got both sides on the stands I just repeated the procedure but jacking from the sub frame this time... then re-adjusting the stands to the height I want.
Hope this helps.

to jack it on the rear use the diff in the middle, stands can be placed on the rear subframe/beam safely.
to jack front u can use crossmember or rails and stand it on the rails
