Only electrical device I've ever seen on an E30 exhaust system is a O2 (lambda) sensor.
What makes you think there's a temp sensor?

That is indeed a temp sensor, but since it's only fitted to Japanese spec. E30s, I've never seen one, or am ever likely to!
No idea what it's for.

Hmm, an O.E EGT thermocouple, must be there to protect the cat from overtemp, from sitting in all those jams

most modern Audi's run an EGT setup under closed loop, its almost a better method than an 02 sensor, but only almost

Correct it is an extra sensor for monitoring the catalyst temperature for japanese spec vehicles.

Running an EGT and a WBO2 is a great way to see what sort of fuel AND ignition advance you can get away with.
The new Emerald can use the VAG EGT sensors as a trigger to retard ignition timing a bit, add more fuel and/or lower boost if the EGTs start getting out of hand.
