Cooling issue - 325i

So, most of the time when moving the temp needle sits just below half, which is where it should be AFAIK. Then when I am stopped or moving slowly in traffic for a while the needle starts to creep up towards 3/4 and I get worried and get the heater and fan on which brings it under control.

What could it be? I have recently:
Changed the thermostat
Changed the water pump (with a cambelt change)
And not so long ago replaced my viscous coupling with a 2nd hand but working fine one

And the mechanic who did the cambelt change says the rad is fine

What else could it be?

Wanna sort it out before the weather gets too warm

Viscous fan coupling.....
M30 Tech 1 Touring on gas.

are you losing coolant?

if not could be an airlock somewhere?
