When using 60mm drop springs you should use the shocks to go with them.

If you drop an E30 so much you should also get new shocks who can handle that kind of drop!
The time its takes it very much up to if you or a garage is doing the job? If you do it your self, make a calculation of 3 hours per corner for the front and 2 hours per corner for the rear.
