For doing the underside with 3M 08800 two part under sealer but just curious if it has to be painted after or is it fine left the way it is? Did the E30’s leave the factory with grey underseal or was it painted body colour?

3M stuff will take paint OK, but doesn't need to be. OE underbody was uniform grey primer, but with extensive body colour overspray.
