Recommend me some replacement shocks and springs for a standard..ish ride height.

For UK road use, Bilstein B4 dampers.
For standard height springs, your choices are limited, possibly to genuine BMW, but remember, new standard springs and rubber pads, etc., will probably result in a car that rides considerably higher than it does now, so my recommendation would be -35mm springs from Eibech or H&R. I don't think either list touring springs, but cabriolet springs are close enough.
