Advice needed on tyre set up for e30 tourer/estate 10j rear

I recently got myself a set of bbs wheels however,now need your help guys in getting the best tyre set up as the guy at tyre shop looked clueless.

They are a staggered set with front of 17x8.5j and rear 17x10j

I don't mind having a little stretch if it help fit it under arch.

I will be fitting these to my e30 tourer so guys please help me find the best tyre set up

You are going to need to roll your arches minimum depending on offset
