Is there any specific difference between a drivers seat and a passengers seat?
could you swap in an older drivers seat for a less used passengers seat?

You cant really fit a drivers seat in place of a passenger as the recline levers will be against the transmission tunnel, and in a two door the tilt forward lever will also be on the wrong side. You will also spot the biggest problem when you clunk-click your seatbelt in..... Physically it is possible but not really an option.
Guide here to strip the seats (this is a sport seat but same principle) then you can removed the foam and fabric (soft bits!) and fit on the correct base.

The recline mechanism is easily swapped from the old driver's seat to the replacement passenger seat, and not all seats have a tilt mechanism to worry about. On those that do, the seat bases can be swapped over complete, and just the fabric swapped on the backs.
The majority of my E30s have ex passenger seats as driver's seats.
